#1 Creamy Dressing with Coconut Milk and Cashew Nuts

Add salt to a dressing for flavour and for its texture. With Khoisan fleur de sel you sometimes taste the salt grain without the dressing tasting ‘too salty’. In contrast to fleur de sel, table salt is finer and lighter, which means that each bite has the same salt content and tastes the same. Table salt can make it seem like the dressing contains too much salt.

Preparation time: 5 minutes

Ingredients
½ cup cashew nuts (soaked for 12 hours in water beforehand)
1 cup coconut milk
juice of 1 lemon
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dill
½ teaspoon Khoisan fleur de Sel
¼ teaspoon black pepper
1 teaspoon finely chopped scallions

Preparation
Grind the cashew nuts with the (hand) blender.

Add the coconut milk gradually.

Add the spices and the lemon juice and mix well.

Watch out: the coconut milk stiffens in the refrigerator. Take dressing out of the refrigerator a sufficient amount of time before use.

#2 Summer Dressing for a BBQ

The characteristics of a good olive oil are much more than the label ‘cold pressed’ or ‘extra virgin’. The less amount of ingredients used in your salad dressing, the more important the quality of the olive oil. Or so you would think. The quality of the olive oil always has an influence on the flavour of your dressing, regardless of the composition.

Ingredients
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
juice of 1 mandarin orange
juice of 1 lime

Preparation
Mix all the ingredients together.

Be sure that your dressing flavours all the vegetables in your salad. Use salad tongs or your hands to spread the dressing.

# 3 Mustard Dressing with Coconut Blossom Sugar

Adding refined sugar to your homemade dressing doesn’t make your dressing much better than what you can find in the supermarket. Pay attention to the sweeteners that you use to balance out the flavours in your salad dressing. Coconut blossom sugar is a wonderful alternative. Together with salt flakes, Gula Java Brut adds texture to your dressing.

# 4 Balance Delight Hemp Oil Dressing

If you already use hemp seed in the kitchen, then you are familiar with the nutty, fresh taste of hemp. Hemp oil, such as Balance Delight, has a very similar flavour. It is the pure, cold pressed oil of hemp seed. When you add this oil to your salad dressing you don’t need to add any other nuts or seeds.

Ingredients
1 tablespoon Balance Delight Hemp Oil
1 tablespoon finely chopped scallions
1 tablespoon extra virgin olive oil
1 tablespoon red wine vinegar
1 clove of garlic
½ teaspoon of honey

Preparation
Put all the ingredients together in a shaker and shake well.

# 5 Dressing with Walnut Oil and Fresh Thyme
