Matcha – Premium HORAI
Premium HORAI is an organic Japanese matcha to enjoy at special moments. The tea is irreplaceable and essential in the matcha assortment of a true green tea lover. Much like Super Premium TEN, Premium HORAI is a matcha to prepare as koicha.
As koicha – thick, green tea – the Premium HORAI is best able to shine. The colour is bright green; the scent is grassy and the taste has umami. For those who prefer to experience the consistency of regular tea, you can prepare this tea as usucha as well.
Koicha vs usucha
There are two ways to prepare matcha: as a thin (normal) tea, or as a strong, syrupy, thick tea. Koicha is matcha prepared as a thick tea. Usucha is matcha prepared as a thin tea, whisked with the chasen to avoid lumps and to obtain an attractive foam layer.
The preparation of matcha as koicha is only recommended for matcha of superior quality that promises to have a soft, deep flavour, such as the Premium HORAI. Matcha of inferior quality is too bitter to be prepared as koicha.
Premium HORAI is therefore matcha to drink, not to use in dishes. If the name “HORAI” can be any indication, the tea reflects Japan’s essence: HORAI is the old name of the group of Japanese islands. It would be a shame to ruin the flavour of this matcha by blending it with other ingredients.
